<p class="wp-block-paragraph">In the space of two weeks, The Donn, Craft Irish Whiskey&#8217;s single malt, has been awarded Double Gold at the San Francisco World Spirits Competition (SFWSC) and Gold Outstanding at the International Wine &amp; Spirit Competition (IWSC). Both results scored 98 points. Both were judged completely blind.</p>



<p class="wp-block-paragraph">For a whiskey that is just under seven years old, the achievement raises a question worth answering properly: how does a young Irish single malt compete with, and beat, spirits that have spent decades maturing in cask?</p>



<h2 class="wp-block-heading">Two Competitions, Two Continents, One Result</h2>



<p class="wp-block-paragraph">The San Francisco World Spirits Competition and the International Wine &amp; Spirit Competition are both judged independently, by different panels, using different scoring criteria, on different continents. </p>



<p class="wp-block-paragraph">At IWSC, The Donn ranked joint second among more than 1,300 whiskies judged worldwide, with only one whisky in the entire competition scoring higher. It was also the only whiskey in its category to receive Gold Outstanding.</p>



<p class="wp-block-paragraph">This is also not a first. The Donn has now been recognised at the highest level for three consecutive years, with wins spanning North America, Asia, and Europe – including Single Malt Whiskey of the Year titles at USA Spirits Ratings (2024), Asia Spirits Ratings (2025), and the London Spirits Competition (2026).</p>



<h2 class="wp-block-heading">Why Age Isn&#8217;t the Whole Story</h2>



<p class="wp-block-paragraph">Irish whiskey, like most aged spirits, has traditionally treated age as a proxy for quality. Older is assumed to mean smoother, more complex, more refined. The Donn challenges that assumption directly, not by ignoring maturation, but by approaching it differently.</p>



<p class="wp-block-paragraph">Rather than relying on time in a single cask type, The Donn is built through a progressive cask journey, where each stage is a deliberate decision rather than a default.</p>



<p class="wp-block-paragraph">The whiskey begins in ex-bourbon casks, then moves through Tawny Port, deep-stave toasted virgin Hungarian oak, and multiple styles of Pedro Ximénez sherry. Each transition introduces a new layer of flavour – sweetness, structure, spice, depth – building on what came before it.</p>



<p class="wp-block-paragraph">This is further shaped by varying barrel sizes and controlled fill levels, which alter the ratio of wood to spirit and the whiskey&#8217;s exposure to oxygen. The result is a maturation process designed to accelerate complexity and integration, rather than simply waiting for years to pass.</p>



<p class="wp-block-paragraph">&#8220;Every cask, every fill level, every decision was made to shape flavour, not follow convention,&#8221; says Jay Bradley, Founder and Master Blender at Craft Irish Whiskey. &#8220;When independent judging panels on three continents repeatedly reach similar conclusions under blind-tasting conditions, it reinforces the whiskey&#8217;s quality and consistency.&#8221;</p>



<h2 class="wp-block-heading">What the Judges Tasted</h2>



<p class="wp-block-paragraph">At IWSC, judges described The Donn as opening with a zesty, fruity aroma of cola and spice, developing into a rich palate of treacle, raspberry, and wood, with apple, red velvet cake, ginger, and chocolate emerging on a sweet, lingering finish.</p>



<p class="wp-block-paragraph">At SFWSC, judges described The Donn as a richly layered single malt Irish whiskey, opening with inviting aromas of soft crème brûlée and dark dried fruits. The palate was noted as round and decadent, with notes of chocolate, orange, dried cranberry, caramelised sugar, and toasted nuts, accented by a touch of vinous sweetness. The finish was described as bold, long, and beautifully balanced, where the influence of multiple cask types unfolds in waves of lingering complexity and depth.<br></p>



<h2 class="wp-block-heading">A Different Way to Think About Maturation</h2>



<p class="wp-block-paragraph">For a category where age statements still dominate shelf talk and marketing, The Donn&#8217;s results offer a useful counterpoint that quality in whiskey doesn&#8217;t have to be a function of time alone.</p>

<p class="wp-block-paragraph">At Craft Irish Whiskey, our approach is guided by barrel craft, maturation techniques and a focus on flavour, not age. <em>The Donn</em> is a clear reflection of this philosophy. From the moment it was distilled, the whiskey has been carefully managed through a bespoke maturation journey.</p>

<p class="has-large-font-size wp-block-paragraph"><strong>The Welcome Dinner: The Ultimate Irish Coffee</strong></p>



<p class="wp-block-paragraph">Night one kicked off with the Welcome Dinner, where we introduced an elevated take on an Irish classic, The Ultimate Irish Coffee, crafted in collaboration with Illy Coffee. Served as an after-dinner pairing, this reimagined classic combined The Donn, our award-winning Single Malt, with Illy’s medium roast Arabica coffee. Smooth, structured, and perfectly layered. The Donn’s PX, port, oak and bourbon cask finishes brought spice, toffee, and dark fruit that harmonised with Illy’s chocolate-toned coffee.</p>

At our stand, we showcased two bespoke food pairings that demonstrated whiskey’s incredible range and pairing potential.</p>

<p class="wp-block-paragraph">The Taoscán is known for its complex profile featuring notes of vanilla, cedar, oaked musk, rich maple syrup, caramelised figs, and juicy raisins. Cinco Jotas’ Acorn-Fed 100% Ibérico Boneless Ham offers a delicate balance of nutty sweetness and umami, with a melt-in-the-mouth texture. This pairing creates a harmonious balance between the whiskey’s complexity and the ham’s delicate flavours. The Taoscán’s time in Sherry Oloroso hogshead casks adds rich, nutty, and dried-fruit notes that resonate perfectly with the deep umami and acorn-sweetness of Cinco Jotas ham. </p>



<p class="wp-block-paragraph">The oxidative influence of Oloroso brings warmth, savoury depth, and a silky texture to the whiskey, echoing the complexity of the ham without overpowering it. Just as the ham’s fat melts on the palate, The Taoscán’s Oloroso-aged character gently cuts through with layers of walnut, spice, and subtle sweetness, creating a balanced, indulgent pairing where both elements enhance each other.<br></p>

Then comes The Turf Cutter. Its gentle peat, honeyed sweetness, and natural oiliness don’t compete, they complement. The whiskey doesn’t follow the caviar; it elevates it. Peated notes cut through the umami, brightening the caviar’s profile, while layers from PX and Tawny Port casks add depth and complexity. Both evolve in the pairing, what starts as two exceptional elements becomes a single, seamless tasting experience. </p>



<p class="has-text-align-left wp-block-paragraph">The Turf Cutter’s subtle smoke and layered sweetness amplify the caviar’s almond and umami notes, while its structure balances the creamy texture and briny intensity. A sophisticated interplay of earthy richness and refined elegance, perfect for high-end pairings or standout moments on a tasting menu.</p>

<p class="wp-block-paragraph"><em>&#8220;Whiskey, to me, has always been more than a drink. It’s a living, breathing spirit– complex, evolving, and deeply expressive. Each bottle holds a story, shaped by grain, wood, time, and craftsmanship. But what many people overlook is how that story can change dramatically depending on the context in which the whiskey is experienced.</em></p>



<p class="wp-block-paragraph"><em>That’s where food pairing comes in, not as a gimmick, but as a powerful tool. You see, whiskey isn’t static. It reacts. A simple bite of food can reshape how the liquid feels, tastes, and finishes on the palate. Fats can soften the alcohol burn and reveal a hidden sweetness. Acidity can cleanse and refresh, sharpening a whiskey’s structure. Even umami, often found in aged cheeses or cured meats, can deepen a dram’s finish and enrich its wood-driven character. This isn’t about novelty, it’s about unlocking the full potential of a dram. Done right, food doesn’t mask whiskey – it reveals it, amplifies it and sometimes even transforms it.&#8221;</em></p>

It was a night of celebration and recognition – chefs donning their signature red scarves as they joined one of the most prestigious lists in global cuisine. And for us, it was a chance to continue a conversation we care deeply about: how whiskey can belong in this scene.&nbsp;</p>

<h2 class="wp-block-heading">The Welcome Dinner</h2>



<p class="wp-block-paragraph">The festivities began with the unforgettable Welcome Dinner at <a href="https://carversteak.com" target="_blank" rel="noopener">Carversteak</a>, located inside <a href="https://www.rwlasvegas.com" target="_blank" rel="noopener">Resorts World Las Vegas</a>. Here, the kitchen was taken over by some of the biggest names in high-end gastronomy. Two of the Roca brothers of <a href="https://cellercanroca.com/en/" target="_blank" rel="noopener">El Celler de Can Roca</a> teamed up with Virgilio Martínez and Pía León from <a href="https://centralrestaurante.com.pe/en/default.html" target="_blank" rel="noopener">Central</a> in Lima to create culinary mastery, including binchotan charcoal-grilled wagyu rib cap. The Welcome Dinner concluded with our very own multi-award winning Single Malt, <a href="https://craftirishwhiskey.com/whiskey-guide/the-donn-age-is-just-a-number/">The Donn</a>, acting as a digestif to perfectly finish the meal.</p>

<h2 class="wp-block-heading">The Chefs&#8217; Feast</h2>



<p class="wp-block-paragraph">The following evening, the Chefs&#8217; Feast took place at the <a href="https://www.wynnlasvegas.com" target="_blank" rel="noopener">Wynn Las Vegas</a>, the host hotel for the Awards Ceremony. The event guided guests around the globe from one culinary station to the next, including fresh ceviches with Yucatan flavours, hand-carved steaks from South America, and sizzling taco stations. The evening was accompanied by live music, dance, and of course, neat pours of our Irish Single Malt, The Donn.&nbsp;</p>



<h2 class="wp-block-heading">The Awards Ceremony</h2>



<p class="wp-block-paragraph">The Awards Ceremony was then held on the 5th June, where guests were welcomed into another grand showcase of high-end cuisine at the Wynn, including Osetra caviar, jamon Iberico and freshly dressed Peking duck. The highlight of the event was the addition of The Craft Irish Whiskey Co. Lounge, where there was the opportunity to not only sample The Donn, but also The Taoscán, which was crowned Irish Single Malt of The Year at the <a href="https://londonspiritscompetition.com/en/competition-global-results/2024/" target="_blank" rel="noopener">London Spirits Competition 2024</a>! The world’s first Port &amp; Chestnut finished whiskey, The Taoscán, was a showstopper. Attendees fortunate enough to get a dram before the bottle was empty, could be heard calling The Taoscán the best whiskey they had ever sipped. Guests were encouraged to carry a personal pour with them into the neighbouring theatre for the highly anticipated unveiling of the year’s top restaurants.&nbsp;</p>



<p class="wp-block-paragraph">After an evening of incredible cuisine, the coveted Red Scarves were draped around the necks of this year’s winners, including 1st place holder Disfrutar in Barcelona, Spain. We wish to congratulate everyone in attendance for their hard work and achievements, and we couldn’t be more excited to see where The World’s 50 Best takes us in the year ahead.&nbsp;&nbsp;</p>

Indeed, we recently set the world record for the most expensive whiskey ever sold: The Emerald Isle—an unparalleled collector’s piece that can never be replicated. But we know as well as anyone that whiskey must do much more than sit pretty on a shelf. Its primary purpose is to be enjoyed; cherished amongst friends and family. </p>



<p class="wp-block-paragraph">The Donn is a compelling point in case. It’s our most accessible bottling to date, packaged and priced to be enjoyed as our version of an everyday dram. It encompasses a meticulously married array of Irish Single Malt, with a deep sherry influence, served at an exacting 46.1% ABV. Rich and creamy textures define its mahogany-hued body, nosing with figs and prune, nestling across the palate with candied orange peel and cinnamon spice.&nbsp;</p>



<p class="wp-block-paragraph">A relative newcomer to our portfolio, the 2023 release has already been recognised as the “World’s Best Irish Whiskey” winning the Master Medal at the <a href="https://www.thespiritsbusiness.com/2023/10/the-db-sb-autumn-blind-tasting-2023/" target="_blank" rel="noopener">2023 Drinks Business and Spirits Business Autumn Blind Tasting</a>. The esteemed palates of the International Wine and Spirits Competition were equally mesmerised by the sublime liquid, noting its “incredible complexity that balances through to the finish.”</p>



<p class="wp-block-paragraph">Yes, The Donn has a way of winning over the adoration of just about anyone who sips it; a superior example of how careful cask curation can develop fine flavours, even amongst whiskeys which are perceived as “younger.” The Craft Irish Whiskey Co.’s Founder and master blender Jay Bradley, is a firm proponent of the fact that age is merely a number—not a guarantor of quality. Just as you might find 50 and 60 year old scotches that fall flat and muted in the mouth, so, too can you nurture a seven-year-old spirit to a sensational end.&nbsp;</p>



<p class="wp-block-paragraph">For this release, Bradley began with the highest quality Irish Single Malt on the market, entering it into ex-bourbon barrels for four patient years of primary maturation. The liquid was subsequently re-racked into Tawny Port Pipes, then transferred <em>back</em> into heavily toasted ex-bourbon casks, before a final submersion amongst a series of PX barrels, ranging from 64 to 225 litres in size. If that sounds like a labour-intensive odyssey, that’s because it was. Yet each and every turn was necessary to arrive at the adventurous pour you uncork today.</p>



<p class="wp-block-paragraph">The cork in question is actually worthy of praise in its own right. It sits under a hefty obsidian enclosure, topping a sleek bottle with sharp, bevelled edges. As with any release from The Craft Irish Whiskey Co., The Donn uses Irish mythology to shape its unique bottle, merging design, taste and storytelling to create disruptive whiskey differentiation. The Donn’s elegant decanter has been created by our award-winning team of designers, led by world renowned artist Tiago Russo. You’ll never receive anything less from us.</p>

<p class="wp-block-paragraph">Shaun described the notes of caramel, orange and a depth of spice from The Donn, and decided that the robust taste would perfectly accompany a duck dish, allowing both of the strong flavours to complement and mellow each other out. This pairing has been specially curated for a taste guests have never experienced before, highlighting the hard work that goes into matching wines and whiskeys with cuisine.&nbsp;</p>



<p class="wp-block-paragraph">From the greeting of picturesque grounds, to the spectacular Michelin-star menu, Shaun Rankin at Grantley Hall is filled with little pockets of heaven that embody luxury, including our ultra-rare Single Malt The Taoscán behind the bar.&nbsp;</p>
