Begin The Donn Journey
The Donn Journey is a seven-year, guided maturation experience led by Founder and Master Blender, Jay Bradley, one of the most-awarded in the world. Rather than passively ageing in a warehouse, your cask is actively crafted. Throughout the journey, the spirit is continuously evaluated, from which precise decisions are made around cask selection, finishing and maturation strategy to shape it into a future release of The Donn.
An immersive, transparent journey into the art of whiskey creation.
This is not passive ownership. As an owner, you join the journey alongside Founder and Master Blender Jay Bradley, as the whiskey is actively crafted toward its final expression.
At the end of the seven-year period, your cask has the potential to be included within a future release of The Donn. CIW will typically buy back casks at this stage — though there is no obligation to sell. Owners may retain, continue maturation, bottle privately, or sell. CIW retains a first right of refusal.
Regular Cask Samples
Receive samples from your cask as it evolves, with detailed tasting notes explaining its progression.
Re-Casking Decisions
When a decision is made to re-cask, you receive both the new sample and a clear explanation of why that change has been made.

Enter The Taoscán Journey
A more advanced stage of maturation, with whiskey already passed through multiple barrels. Earmarked for future releases of The Taoscán, a category that typically commands €1,200+ per bottle, recognised with multiple Master medals at The Spirits Business Awards and featured across leading Michelin-starred restaurants throughout the UK and Ireland.

Where The Donn focuses on precision and balance, The Taoscán is an exploration of flavour at a higher level. Built through the combination of unique cask finishes and innovative wood pairings, it produces richer, more complex, and higher-value expressions.
A shorter pathway to a significantly higher-end expression — approximately 7 to 10 additional years targeting a final age of 15—18 years. The Taoscán typically commands over £1,200 per bottle, against The Donn's £215. CIW retains a first right of refusal on any future sale.

Instead, they remain under the stewardship of Craft Irish Whiskey, where they are held, monitored and cared for at the highest standard. Owners may choose to draw down bottles over time, request private bottlings, or bottle the cask in full, with every aspect of the experience managed discreetly and personally.
These casks are intended for private consumption and collection. Craft Irish Whiskey retains stewardship of the cask, with owners able to request bottlings at their discretion, either in stages or as a full release.
