Chef Patron Shaun Rankin creates culinary masterpieces with seasonal menus, including locally sourced and foraged ingredients, to maintain a zero-waste philosophy. Excited to work with our soon-to-be-released Single Malt The Donn, Shaun used his expert palette to create a dish to not only feature our award-winning whiskey, but a dish that balances the flavours of the Game Season and The Craft Irish Whiskey Co. together.
Shaun described the notes of caramel, orange and a depth of spice from The Donn, and decided that the robust taste would perfectly accompany a duck dish, allowing both of the strong flavours to complement and mellow each other out. This pairing has been specially curated for a taste guests have never experienced before, highlighting the hard work that goes into matching wines and whiskeys with cuisine.
